Backstory



Upon posting the professional pictures of my 2020 winning cookie piece in the 3D category of the COOKIE ART COMPETITION by Julia M. Usher, I was contacted by a few people requesting me to offer an online class on this project.
I should say it wasn't in my original plan, as I didn't think there could be a real interest, but I actually really liked the idea.


After opening a preliminary intake form to see if there could be enough interest to actually activate the course - since the project is not only quite advanced and challenging, but it spans several work days - I was gladly able to officially open the course upon meeting the minimum student number count.

Description


ACCESS:
this is a REPLAY of a live streaming course that previously took place in a private FB group with exclusive access to enrolled students only.

After enrolling you will be able to access the very same Fb group with the original video recordings and all the complementary resources, such as recipe handouts, patterns, supplies list, discount coupons and further suggestions.


STRUCTURE:

given its ONLINE character the course is mainly demonstrative but allows live interaction with the students throughout each of its sections, in order to guarantee everyone the opportunity to watch the videos according to their own pace, without missing on my personal assistance.

Please note this is a very extensive in-detail course that shows an array of different techniques at an advanced level, but since videos will show the full process step-by-step, anybody is welcome.


SUPPORT:

I will remain always available in the FB group to answer in writing to further additional questions relating to the program that may not already been addressed during the main lessons, for the entire activation period of the course (six months).

Videos and resources will remain always accessible to all course members in the dedicated FB group, even after the end of the activation period.

It is understood that access is reserved for paying subscribers only and sharing with external people is absolutely forbidden. The platform checks the access IP addresses of the customers and automatically blocks anomalous traffic.

1: project and supplies overview (1 hour and 15 mins)

friendly presentation chit-chat on how I came up with this project, where I took inspiration from and how I developed it, along with a general overview of main supplies and ingredients, with notes on optional tools and variants


2: cookie dough recipe preparation and baking techniques (3 videos for a total of about 4 hours)

instructional videos on how to prepare my Italian Pasta Frolla cookie dough recipe - the same I used in my very own original winning piece - and the cookie cutting and baking techniques I used, including suggestions for safe transportation


3: pattern tracing (3 videos for a total of 1 hour and 50 mins)

instructional videos on how to transfer the griffins and plate designs, including directions on how to prepare the sugarpaste plate


4: royal icing recipe and preparation (5 videos for a total of 3 hours and 30 mins)

instructional videos on how I prepare my royal icing, how to make traditional parchment paper piping bags and super-sharp seamless and tipless miniature cellophane piping bags for very detailed decoration, paddling technique for adapting the consistency according to techniques.


5: griffins dimentional pressure piping and base flooding (2 videos for a total of 3 hours and 30 mins)

step-by-step explanation including a fully extensive demonstration of my special method to achieve smoothless dimentional pressure piping, and base cookie flooding.


6: painting of the plate (6 videos for a total of 7 hours and 30 mins)

painting supplies presentation and extensive full-process videos demonstrating how to achieve the maiolica gradient painting effect with my personal veiling watercolour technique


7: assembling and finishing (7 videos for a total of 3 hours and 10 mins)

instructional demonstration on how to properly assembling the 3D composition and adding the finishing details like the pearl and rope piped borders, the lacquer varnishing and golden sheen.

Your teacher


I have been teaching cake design and pastry for many years now on a professional level, both in Italy and abroad worldwide.

I always thought there was too much distance between the world of classic pastry on one hand and artistic decoration on the other. A sort of rivalry between the two sectors whereby if you do well in one you cannot do well in the other.

And I also think that modern cake design to be taken more seriously must make a qualitative leap, based on solid technical and scientific foundations.

I hope with my contribution to help people bridge this gap.
