We will address new pattern transfer techniques and I will also share with you my special all natural cocoa butter sugarpaste recipe without gelatin, which also happens to be vegan! And this is only the beginning!

The main core of the class will be focused on learning the tips and tricks to handpaint onto fondant or modeling chocolate with a forgiving and easy to approach technique that uses cocoa butter as core medium, but that can be easily applied to any other method like gel or alcohol based colors, and several other surfaces too, including chocolate, ganache, crusting buttercream or royal icing.

ACCESS: this is a REPLAY of a live streaming course that previously took place in a private FB group with exclusive access to enrolled students only.

After enrolling you will be able to access the very same Fb group with the original video recordings and all the complementary resources, such as recipe handouts, patterns, supplies list, discount coupons and further suggestions.

STRUCTURE: given its REPLAY character the course is mainly demonstrative but allows interaction with the students throughout each of its sections as per the following scheme:


  1. three preliminary videos:

    supplies overview
    and cocoa butter sugarpaste preparation (1 hour and 50 mins)
  2. pattern tracing techniques including three different methods (1 hour and 35 mins)
  3. preparatory background dusting technique (2 hours and 15 mins)


  • full main live class recordings about the execution of the decorative part (three videos for a combined total of 7 hours)

Please note that the lenght of these demonstrative streamings is because they show the full process step-by step in details, in order to allow anybody who wishes so to work along at the same time.


  • final Q&A live session recording where I addressed students further questions and doubts after the main class (about 1 hour)


DURATION: the course has a duration of about 14 hours of video overall.

I have been teaching cake design and pastry for many years now on a professional level, both in Italy and abroad worldwide.
